Mango/Kairee/Mavinkayee /Lonache/Upinakayee
As summer has begun...I was looking for pickle ...to prepare for my dearest husband..he loves all sorts of Pickles.
So my search for mangoes started ...but didn't find in market ..I was lucky one day my local vvegetable vendor got it...with no second thought..I purchased 4 raw medium size mangoes..I patted myself..to begin the pickle journey..
So let's get started
Wash raw mangoes.. So that any dirt/ gum..washescaway under running water.
Dry them completely..wipe with clean cotton cloth.Cut into square pieces. And keep aside..let them dry a bit for 2/3 hrs..moisture content less the better.
1tbspn = tablespoon
1tspn= teaspoon
Ingredients:-
1tbspn fenugreek seeds roasted
1tbspn mustard seeds roasted
1tspn Asopotida powder
In a pan add 1 cup of sesame oil..add 2 tspn mustard seeds..allow to splutter, add chana dal and then around 20 /25 garlic cloves..don't fry them ..just look for garlic smell..don't turn them brown.
allow the oil with mustard garlic and chana dal to cool down
Then add 2tspn turmeric powder.. 1tbspn redchilliy powder.
Grind the roasted seeds all 3 ..and add the masala to oil ..then add mango slices and then add salt as required.
I gave twist ..as I like sweet hot pickle..I grated jjaggery..to the pickle mix.
Now fill up in a dry glass air tight container
After 5 days ...you can have it.
Pickle stored for months.
Note:- everyday look for taste..add oil and salt if require
